Have you ever sat in an all-day meeting at work that seems drain your soul? I mean, the idea of sitting in a hot meeting room with people you don’t necessarily like spending time with, is the worst and don’t get me started about “icebreakers,” shoot me now!
Oh, and the temptation of checking your email every minute and knowing that the sneers of others, if you do check it, would not be worth it. The speaker is a hot mess, and you know without a doubt that YOU could do a better job of engaging the group given a chance.

The clock ticks slowly and there are hours to go, and then, there is a saving grace. The Catered lunch! The miscellaneous deli sandwiches with nothing special mayo, food service potato chips, blah! Then, at the end of the table, just past the paper napkins you see what you believe will be the promise that the day will take a turn for the better, It’s the cookie tray! Oatmeal Raisin cookies that are so big you decide ONLY to grab two, you know, one now and one for later.

Our cookies are enormous; in fact, we doubled the size of a standard size cookie. That means more cherries, more pecans, and more satisfaction. Oatmeal Cherry Pecan Monster Cookies

These Oatmeal Cherry-Pecan Cookies are perfect for any time! They are Wholesome enough for breakfast. They are Perfect for an afternoon snack and impressive on a buffet table.

Ingredients

  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter room temp
  • 2 cups brown sugar Packed
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 cups old fashioned rolled oats
  • 1 cup chopped pecans toasted
  • 2 cups dried cherries

Instructions

  1. Preheat oven to 350f. Line baking sheets with parchment.

  2. In a large bowl, mix together flour, baking soda, and salt.

  3. In a stand mixer, beat butter and both sugars until creamy, add eggs, one at a time beating well after each addition,  Add vanilla and mix until incorporated.

  4. Gradually add flour mixture, mixing until just combined.

  5. Stir in oats, pecans, and cherries.

  6. Using a 6 oz scoop, combine two scoops of dough and form into a ball. Place six balls on the cookie sheet spaced 2 inches apart.

  7. Bake until golden, about 13 minutes. Let sit on the cookie sheet for 5 minutes, then transfer to a wire rack to cool. Repeat with remaining dough.
