Doug’s Damn Good Fudge

This a story about Fudge! When I was a kid, my family lived several miles in the country on gravel roads.
My parents owned several rental properties on their farm. I remember that the tenants didn’t stay long, usually just the winter.

All these years later I can’t recall any of their faces or even their names except an elderly couple that lived in my parent’s little white house about a mile from our house. Their names were Fudge, and Bertha….I’m not kidding.
I don’t know why he was called fudge, but for a young boy, it was the coolest name ever.

They must have been in their mid-seventies and married for at least fifty years. Both were small people, not even 5’ tall. Every day he wore old bid overalls, and she wore homemade dresses. Even as a child I knew that life hadn’t been easy on them. I could see it in their posture and weathered faces. They didn’t have any friends or family. It was them against the world.

I can’t recall their history, probably because I never knew it. The one thing I knew for sure was that Fudge and Bertha were the nicest people I had ever met. They were jolly and enjoyed being around my parent’s unruly children. All of us kids were equally fond of them.

They stayed around longer than most tenants, it seems like a few years, but finally one day, just like that, they moved on.

To this day, my parents still refer to that little white house as the “Fudge House.” It seems they had an impact on everyone in the family, not just me.

Doug's Damn Good Fudge

Everyone who tastes this incredible fudge reacts the same way. The say "Man, that's damn good fudge". The spicy cinnamon, the richness of the dark chocolate, and the layer of sea salt come together in an unbeatable combination.

Ingredients

  • 2 11 ounce pakages Dark Chocolate Chips dark chocolate provides the correct sweetness
  • 1 can sweetened condensed milk full fat
  • 1/4 cup butter
  • 3/4 cup hot damn schnapps
  • 1/4 cup sea salt flakes

Instructions

  1.  Butter an 8x8 square cake pan In the bowl of a double boiler, add all ingredients except sea salt.   

  2. Add three cups of water to the bottom pan of the double boiler and heat water to a rapid boil. Once boiling, remove from the heat and place the bowl w/ ingredients on top of the pan with the boiling water. Make sure the water does not touch the bowl. 
  3. The ingredients will start to melt. Stir occasionally with a rubber spatula. Once all ingredients have melted and stirred together, continue stirring until creamy and smooth.
  4.  Pour fudge mixture into the prepared 8x8 pan. Smooth fudge with the rubber spatula until it’s evenly spread.
