White Chocolate Macadamia Cookies

I have been working on this recipe for White Chocolate Macadamia Cookies a while now. It was a tricky recipe to get right. I knew what I wanted the result to be, but the cookies came out very flat or hard and chewy. I have made this recipe several times, and I honestly say, they are AMAZING!

I love white chocolate. I love the creaminess and the mild sweetness it adds. I have always been on the fence as to where I stand when it comes to macadamia nuts. I like them, but I can take them or leave them.

I tried other nuts in this recipe, cashews for instance. I liked them, but at the end of the day, I came back to the macadamia nut. It pairs so well with the white chocolate.

I took a container to work recently, and everyone loved them. As I have mentioned in other blog posts, co-workers make the best test subjects. They are always glad to try something new, and they usually are honest. In this sampling, they agreed that the macadamia was better than the cashew.

The mild flavors of the white chocolate and macadamia nuts make for a creamy, lightly nutty cookie.

Ingredients

  • 1 cup butter, softened
  • 3/4 cup packed light brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup macadamia nuts chopped
  • 1 cup white chocolate chips

Instructions

  1. Preheat oven to 350 degrees


  2. In a large bowl, cream together butter, brown sugar, and sugar until smooth.


  3. Beat in eggs, one at a time, stir in vanilla and almond extracts.


  4. Combine flour, baking soda, and salt; gradually stir into the creamed mixture.


  5. Mix in the macadamia nuts and white chocolate.


  6. Drop dough by teaspoonfuls onto ungreased cookie sheets.


  7. Bake for 10 minutes in the preheated oven
