White Chocolate, Cherry, and Pistachio Cookies

A new cookie franchise opened in our neighborhood a few weeks ago, and with the help of social media spreading the word, the grand opening was just that, grand. It was as if no one had ever tasted a cookie before the store opened. The line of people standing in the rain stretched down the sidewalk and around the building.

The days and weeks after the grand opening have been pretty much the same, long lines of pandemic naysayers waiting to go inside for the privilege of paying five dollars for a single cookie. As my friend, Butch would say, “They must be proud of those cookies to charge $5 for them.”

The reviews on Yelp are mostly good, and I am happy for the owners. They found a need in the community and filled it. I assume the newness will wear off in time, and their customers will figure out that baking delicious cookies is easy, better tasting, and much cheaper.

Case and point, my White Chocolate, Cherry, and Pistachio Cookies are unlike any cookie you have had. The cookie is soft, moist, and packed with flavor. The white chocolate is smooth and creamy. The cherries add a sweet note that comes through nicely, and the pistachios provide a unique texture and saltiness that ties this cookie together.

White Chocolate, Cherry, and Pistachio Cookies

These buttery cookies are packed with white chocolate, sweet Cherries, and salty pistachio nuts.  The flavors work together to make the most delicious cookie!

Ingredients

  • 1/2 cup unsalted butter softened at room temperature
  • 1/2 cup packed brown sugar
  • 1/2 cup white sugar
  • 1/2 teaspoon salt
  • 1 egg
  • 1/4 teaspoon vanilla extract
  • 1 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1 cup white chocolate chips
  • 1/2 cup shelled pistachio nuts
  • 1 cup dried cherries

Instructions

  1. Preheat oven to 375 F.

  2. Grease a cookie sheet

  3. In a large mixing bowl, combine the butter and sugars. Using an electric mixer, cream the butter and sugars until fluffy and pale in color, 3-5 minutes. This step is essential for ensuring soft, chewy cookies.

  4. Beat in the egg and vanilla extract.

  5. In a separate bowl, combine the flour and baking soda.

  6. Using a wooden spoon, carefully stir the flour mixture into the butter mixture, just until combined.

  7. Stir in the white chocolate chips, dried cherries, and pistachio nuts.

  8. Drop heaping spoonful's of the batter onto the greased cookie sheet.

  9. Bake the cookies for 8-10 minutes or until they begin to turn golden around the edges.

  10. Allow the cookies to cool for 2 minutes on the cookie sheet before transferring them to a wire rack to cool completely.
