Grilled Tropical Sausage and Pineapple Skewers

 

The next time you are at a party or a get together that includes food, keep an eye on the appetizer table. You will notice that the platters with assembled appetizers will go first.

Anything on a toothpick or dip that is already on the cracker will fly off the tray. Appetizers on the bottom of a crock pot will sit and overcook. It’s a cold hard fact, my friends.

Grilled Tropical Sausage and Pineapple Skewers

Perfect for the big game or an appetizer as guests arrive. Our simple Grilled Tropical Sausage and Pineapple will take center stage with its salty and sweet taste.

Ingredients

  • 2 lbs kielbasa cut into 1/2 inch size pieces
  • 14 oz pineapple slices in juice, reserve juice
  • 5 tble teriyaki sauce
  • 2 tble sweet chili sauce
  • 2 tble honey
  • 2 tble pineapple juice, reserved from the rings

Instructions

  1. preheat grill (gas or Charcoal)


  2. Place kielbasa slices on the grill, cut side down.


  3. Cook until grill marks appear and the desired degree of char.

    Flip sausage over and grill the other end. Once cooked, allow draining on a paper towel.


  4. Grill pineapple slices for 3 minutes on each side or until desired grill marks appear.


  5. Cut grilled pineapple in inch and a half pieces to fit on top of the sausage.


  6. Assemble the sausage and the pineapple in a medium skewer.


  7. Prepare sauce by mixing remaining ingredients in a saucepan and simmering until it begins to boil. Dip the sausage-pineapple skewer in the glaze and drain on a sheet pan, Allow to drain for two-three minutes and transfer to a serving platter.

    I made this for a party two nights ago and you’re right ~ all 30 pieces flew off the tray. I didn’t want to fire up the grill for such a small amount so I pan-fried them and got a nice sear ~ they looked great. Then I dipped them in a thickened sauce: pineapple juice, soy sauce, honey and brown sugar. Superb!
    (Next, I will try your Sicilian meatballs…can’t believe there is no garlic but I’ll stick w/the recipe and see if it’s a winner also.)
