Chocolate Caramel Corn

I love this recipe!  It dates back to the 1970s. I updated it, but the original recipe was stolen from my mom’s recipe box. This recipe uses a microwave oven to cook the caramel. This is such an easy recipe your friends and family will love.

I was a kid in the ’70s when we got our first microwave. It was huge! It took up most of the counter space in our kitchen. My brothers and sisters and I were mesmerized by it. We would put various foods in it and stare through the glass window watching things like hotdogs explode. We learned important life lessons from it too, like putting a metal fork in the oven would cause us to get a spanking.

Back then, microwaves were for reheating food and not much more. This recipe was an exception. Cooking the caramel sauce in a paper bag takes away the chance of burning it on the stove. I have made this recipe for years and recently updated it with the addition of milk and white chocolate.

Chocolate Caramel Corn

Preparing the caramel corn in the microwave makes this delicious snack easy to prepare. The addition of drizzled milk and white chocolate makes this caramel corn a show stopper.

Ingredients

  • 4 quarts popped popcorn
  • 1 cup brown sugar
  • 1/2 cup margarine
  • 1/4 cup light corn syrup
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking soda
  • 6 oz semisweet chocolate
  • 6 oz white chocolate

Instructions

  1. Place popped popcorn into a large brown paper (grocery) bag and set aside. 
  2. In a heat-proof glass dish, combine the brown sugar, margarine, corn syrup, salt, and vanilla. Heat for 3 minutes in the microwave, take out and stir until well blended. Return to the microwave, and cook for 1 1/2 minutes. Remove from microwave, and stir in the baking soda. 
  3. Pour mixture over the popcorn in the bag. Roll down the top once or twice to close the bag, and shake to coat the corn. 
  4. Place bag into the microwave, and cook for 1 minute and 10 seconds. Remove, shake, flip the bag over, and return it to the microwave. Cook for another 1 minute and 10 seconds.
  5. Pour the popcorn out onto waxed paper, and let cool until coating is set.
  6. Melt semisweet chocolate in the microwave in 30-second increments stirring in between. Once melted, drizzle over caramel corn. Repeat with white chocolate. 
  7. Allow drying for 30 mins.  
  8. Store in an airtight container.
