Beer Battered Pork

Ingredients

  • 2 pounds pork shoulder, cut in 2" inch pieces
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 1/2 cups flour
  • 1/2 cup beer

Instructions

  1. In a large bowl, mix all ingredients except pork.

  2. mix until all ingredients are combined into semi-thick batter.

  3. add the pork to the batter, five or six pieces at a time. Take care to coat each piece with batter.

  4. Carefully add the battered pork to a deep fryer or a pot of oil set at 375 degrees. Do not crowd the pan.

  5. Fry until puffed up and a golden brown. Using a food thermometer, the internal temperature must be at least 145 degrees.

  6. Drain on paper towels. Dip in my Garlic Aioli Sauce and enjoy!
