Rocky Road Fudge
For farm kids in rural Indiana in the 1970’s, summers were full of adventure and a lot of work on the farm.
Don’t get me wrong; we had fun Swimming in nearby creeks, rotten egg fights with my brothers, and the bi-weekly visits from the Schwan Ice Cream truck.
My mom would buy treats from the dusty yellow truck for all of us, and we were always happy to see it pull into the drive.
My favorite ice cream flavor has always been Rocky Road. It was my moms favorite too, perhaps that’s why I liked it so much also.
This fudge is a tribute to that ice cream from my childhood.

Rocky Road Fudge
Everyone's favorite candy packed into this chocolaty treat.
Ingredients
- 1 1/2 teaspoon butter plus a table spoon for the pan
- 2 cups semisweet chocolate chips
- 1 can sweetened condensed milk
- 2 cups salted peanuts plus more for topping
- 110 oz miniature marshmallows plus more for topping
Instructions

Line a 13x9-in. Baking pan with foil, letting ends extend over sides by 1 in. Grease the foil with 1-1/2 teaspoons butter; set aside.

In a large saucepan, combine the chocolate chips, milk, and remaining butter. Cook and stir over medium heat until mixture is smooth.

Remove from the heat; stir in peanuts. Place marshmallows in a large bowl; add chocolate mixture and stir well. Spread into prepared pan. Sprinkle with additional peanuts and marshmallows. Refrigerate until firm.

Using foil, lift fudge out of pan. Cut into 1-1/2-in. Squares.
