Ham and Cheese Quiche

Back in the day, when I was a prep cook in a fine dining restaurant, I gained valuable knowledge of how professional kitchens worked.

I learned to chop correctly, prep bread for hundreds of diners, and how to make fantastic entrée’s from secret recipes. I soaked in all the knowledge I could and was pretty darn proud of myself.

The chef trusted me to help out in all kitchen areas and make anything needed for the lunch or dinner service. Well, that is except for one thing, the quiche.

Our quiche was on the lunch menu and a customer favorite due to its fluffy texture. The crust was perfectly flakey and buttery. Always perfection.

The only person allowed to make the quiche for the restaurant was a lead cook, Diane.

Diane worked at the restaurant for several years and had mad skills, with quiche making at the top of the list. If asked for her recipe, she would smile and turn away without muttering a single ingredient.

I would spy on her from my prep station, and I could see the love and pride that went into each pie. Then, I would go home and try to emulate what I witnessed. But, unfortunately, I would always fall short of the master.

Over the years, I have made hundreds of quiche for myself; it’s one of my favorite go-to dinners. I continuously tweak my recipe, hoping to find something close to the outcome Diane would get in her quiche.

I believe this recipe is very close to the one that Diane would never share.
My Ham and Cheese Quiche is light, flavorful, and the crust? Well, forget about it! It is flakey and holds up to any filling you throw at it. All in all, the perfect quiche, but don’t tell Diane. Enjoy!

Ingredients

  • 1 tablespoon butter
  • 6 eggs, beaten beaten
  • 1 cup whipping cream
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups finely diced ham
  • 1 cup shredded swiss cheese
  • 1 cup shredded cheddar cheese
  • 1 deep dish pie crust

Instructions

  1. Preheat oven to 375 degrees.

  2. Whisk together eggs, cream, salt, and pepper in a large bowl, and set aside

  3. Spread cheese and ham on the bottom of the crust

  4.  Pour filling into pie crust

  5. set on a baking sheet and place in oven for 40 to 45 minutes, or until set.

  6. Serve warm or chilled.
