I believe this recipe is unique because Brian realized that you couldn’t just put a standard formula for muffins in a jumbo muffin pan and have it work.

He reworked the entire recipe and utilized the size of the pan to his favor.

The result is a muffin with a nice dome and a perfect crumb on the inside.

These are, in my opinion, the best muffins I’ve ever had. They are bakery quality. These Chocolate Jumbo Muffins are moist, filled with chocolate flavor, and irresistible.

My advice is to purchase a jumbo muffin pan and follow this recipe; you will be amazed. The next thing on my list, start a YouTube channel. Enjoy!

Chocolate Jumbo Muffins

The large muffin tin creates a bakery style muffin that is chocolaty and wonderful.

Ingredients

  • 2 +2 yolks eggs
  • 300 grams sugar
  • 100 grams vegetable oil
  • 100 grams buttermilk
  • 340 grams sour cream
  • 4 grams vanilla
  • 340 grams four
  • 8 grams salt
  • 12 grams baking powder
  • 4 grams baking soda
  • 50 grams cocoa powder
  • 110 grams chopped bittersweet chocolate

Instructions

  1. Add sugar and eggs into a bowl and whisk to combine.

  2. To that, add oil, buttermilk, sour cream, and vanilla. Whisk to combine.

  3. Measure flour, salt, baking powder, baking soda, and cocoa powder in a separate bowl. Whisk together

  4. Add wet ingredients to the dry

  5. Add chocolate chunks and fold until just combined.

  6. Add muffin liners, then grease or spray, and fill each muffin hole with 225g muffin batter if using a jumbo 6-muffin pan or about 110g if using a standard 12-muffin pan.

  7. Top with a sprinkle of chopped chocolate. Bake in preheated 350f/176c oven for 30-32min.
