Smashed-Up Peanut butter Cup Brownies

Ingredients

  • 1/4 cup butter
  • 1/2 cup creamy peanut butter
  • 1 cup milk chocolate chips
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 eggs eggs
  • 1/4 teaspoon baking soda
  • 1 & 3/4 cups flour

Brownie Topping

  • 2 cups mini peanut butter cups, chopped
  • 3/4 cup chocolate chunks, dark chocolate
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350 degrees
  2. In a 9x13 baking pan lined with foil, lightly spray with cooking spray.

    In a saucepan, fill with 2 inches of water. Place a heat- safe bowl over the pot. Make sure that the bowl does not touch the water. Heat the water in the pan to a simmer. Add butter, peanut butter, and milk chocolate chips. Stir the mixture while melting.

  3. Remove from heat before completely melted. Continue stirring off-heat until fully melted.
  4. Add the following to the mixture; sugar, vanilla, and salt and stir until combined. Add eggs one at a time until mixed well.

    Stir in flour until just combined. Take care to not over mix.

  5. Spread the batter evenly in the prepared baking pan.
  6. In a small bowl, mix peanut butter cups, semi-sweet chocolate chips, and chocolate chunks.
  7. Spread the topping over the brownie mixture.
  8. Bake for 15 minutes until the bars start to pull from the sides of the pan. Let cool completely before cutting. Store in an airtight container.
