Coconut Buttermilk Pie

Ingredients

  • 1 pie crust
  • 1 cup sugar
  • 3 eggs, room temperature
  • 1/2 cup buttermilk, room temperature
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 2 tablespoons all-purpose flour
  • 1 1/2 teaspoons vanilla  
  • 1 1/2 cups unsweetened shredded coconut

Instructions

  1. preheat oven to 325°. 

  2. Prepare pie plate with pie crust.

  3. Place pie plate on a baking sheet.

  4. Beat sugar, eggs, buttermilk, melted butter, flour, vanilla, and salt until blended in a large bowl. Stir in coconut. Pour into crust. 

  5. Bake until the top is lightly golden brown and the center is almost set. About 50-60 minutes.

  6. Cool on a wire rack
